Bailey's Truffles

| powdered sugar | |||
| semisweet chocolate | 8 | ounces | |

| whipping cream | 1/2 | cup | |
| cocoa powder | |||
| sugar | 3 | tablespoons | |
| Bailey's Irish Cream | 1/4 | cup | 
Combine cream, butter, and sugar in a medium saucepan. Bring to a boil over medium heat. Remove from heat. Add chocolate, stirring until completely melted. Stir in the Bailey's.
Chill mixture until firm, about 4 hours or overnight. Shape into balls. (A melon baller works well, but so does a teasopoon and your fingers. Dust with cocoa if things get too sticky.) Roll in desired coatings to cover thoroughly. Chill. Store in airtight container in the refrigerator.
